Healthy Shephard’s Pie (gluten & dairy free)

Can you believe it’s already March!?  St. Patrick’s Day is right around the corner so I wanted to share a recipe in the spirit of the upcoming holiday!  This is a great potluck dish & I just so happen to be making this for our friends that just had their first baby.  You can never go wrong  with the gift of food!

If you are looking for an alternative to the traditional corned beef and cabbage, this is the perfect recipe to make!  The best part…if you have any left overs it reheats beautifully for lunch the next day!

Serve this with a nice salad with chopped romaine, beets, apples, walnuts, and goat cheese with balsamic vinegar and olive oil.  I’ve also made this with mashed sweet potatoes.  I added extra garlic while boiling the sweet potatoes to make them more savory.
